1. To investigate the effects of different drying methods and conditions on drying kinetics as well as physical and mechanical properties of chitosan films incorporated with antioxidant/antimicrobial agents.
2. To study antimicrobial/antioxidant activities of active chitosan films prepared by different drying methods and conditions.
3. To study the release characteristics of antimicrobial/antioxidant agents from the prepared films in a model liquid medium as well as in a real food system.
4. To develop a mathematical model, which enables the prediction of release of antimicrobial/antioxidant agents from chitosan films under various conditions.
