:
To determine if acid tolerance of E. coli O157:H7 changed upon exposure to reduced pH of growth media have an impact on the survival and effectiveness of thermal inactivation of E. coli O157:H7 which not effected to Nham flavor or consumer acceptance during and after Nham fermentation.
