วัตถุประสงค์
:
The main objective of this proposed research is to develop encapsulated gac oil powder from emulsified multilayered emulsions using LBL technique.
The specific objectives are to:
i) gain a better understanding of the properties of the lecithin (as anionic emulsifier) -chitosan multilayers formation of gac oil emulsions prepared by LBL technique;
ii) to characterize the physicochemical properties as well as in vitro digestibility of spray dried gac oil from multilayered emulsions, and to compare these properties with microencapsulated gac oil prepared by conventional encapsulation technique; and
iii) to study the stability of spray dried gac oil from multilayered emulsions under various storage condition and the kinetic of quality changes of gac oil powder in comparison with microencapsulated gac oil prepared by conventional encapsulation technique.
