วัตถุประสงค์
:
- To isolate and characterize collagen from crown featherback skin.
- To extract and characterize gelatin prepared from crown featherback skin using different extraction temperatures and times.
- To study the physical property and sensory property of chicken sausage substituted with selected gelatin.
