วัตถุประสงค์
:
1. To investigate the use of image analysis as a tool to understand non-uniform deformation behavior of model food materials during drying.
2. To propose and test suitable parameters that can represent the deformation characteristics of the model food materials during drying and to compare the results to those obtained from traditional evaluation methods.
3. To establish the relationship between the drying conditions as well as composition and non-uniform deformation behavior and its subsequent influence on physical and physicochemical properties of the model food materials based on the developed image-based parameters.
